Chef Julien Royer, co-owner of Odette, a three Michelin-starred modern French restaurant in Singapore, blends his French culinary roots with Asian influences.

Growing up in a farming family in Cantal, France, he developed a deep respect for nature’s ingredients, shaping his philosophy. He also leads Claudine in Singapore & founded Michelin-starred Louise in Hong Kong, gaining international recognition for redefining French dining & mentoring emerging chefs.

Odette, champions seasonality, terroir, & artisanal produce from top suppliers worldwide. Named after his grandmother, the restaurant reflects her values of hospitality & culinary excellence, offering a refined dining experience with the finest ingredients from Japan, France, & Australia.

His dedication has earned Odette three Michelin stars, Asia’s Best Restaurant (2019), & No. 8 on the World’s 50 Best Restaurants (2021). He was named Restaurateur of the Year (2022) by Les Grandes Tables du Monde & won the Estrella Damm Chefs' Choice Award (2023) for his global culinary impact.

Trained under Michel Bras, he refined his craft in the French West Indies & London before settling in Singapore in 2008. He has presented at top culinary events like Madrid Fusion Manila & Ubud Food Festival, judged the San Pellegrino Young Chef Competition, & was one of twelve elite chefs featured at Hangar-7’s Michelin-starred Restaurant Ikarus in Austria.
